So for this recipe, there are two parts, the actual cake, and the cream cheese frosting, and I've included instructions for both.
Ingredients:
For the Cake:
1 cup sugar
1 cup oil
2 cups grated carrot
3 eggs
1/2 cup chopped walnuts
1 & 1/3 cups plain flour
1 & 1/3 teaspoons bicarbonate
of soda
1 & 1/3 teaspoons baking
powder
1 & 1/2 teaspoons
cinnamon
For the cream cheese frosting:
4 oz Philadelphia Cream Cheese
6 oz icing sugar
1 teaspoon vanilla
1 oz butter
Instructions:
Cake:
Cream sugar and oil, add eggs
one at a time and stir in. Add sifted
dry ingredients, then stir in carrots and walnuts. Bake for 1 hour at 300F. (160C)
Frosting:
Cream all together until
light. Spread over cake, sprinkle with
chopped walnuts.
TIP: You don't have to be absolutely perfectionist with this recipe. It's always better if you go a bit heavy on the ingredients :)
TIP 2: The frosting is so good I would just eat it by itself, so if you're anything like me, put it out of reach once you finish making it and are just waiting for the cake to finish baking <3
