Recipe: Tomato and Capsicum Mint Salad

This is a DELICIOUS and healthy (bonus!) recipe that my sister and I made for dinner last night. Served with some pasta, or some bread... yummmmmmm!



Serves about four as a side.

Ingredients:
2x large tomatoes (roughly chopped into thumb sized pieces)
2x red capsicums (roughly chopped into thumb sized pieces)
1x sprig of mint (you can change how much mint you want depending on your preference of mintiness)
1x Cucumber (chopped into small pieces, but not TOO small)
1x Carrot (chopped into similar sizes to the cucumber)
1x Red Onion (cut into thin slices)
Balsamic Vinegar and Olive Oil to dress

Method:
1) Mix all ingredients in a salad bowl (simple as that)
2) Enjoy

And if I can cook it, so can you. You can ask the other bloggers of my very impressive kitchen skills. Really, I'm just an artistic cook, and I LIKE bubbles... Just coz the pasta was about to explode on Friday night, Kav, doesn't mean ANYTHING!
